Cabbage needs a long simmer; in baby puree, cabbage cooked for less than 20 minutes can remain stringy on the palate. Remove the tough central core because it stays firm no matter how long it cooks. Carrot adds sweetness and helps soften the cabbage’s sulfurous aroma.

Prepare the cabbage

Discard the outer leaves, quarter the cabbage, and cut out the tough central core with a knife; do not use it. The core stays firm even after a half-hour simmer and breaks into grainy pieces in the blender. Cut the remaining leaves into 1 cm-wide strips.

Simmer with the carrot

Put the cabbage strips and carrot cut into 1 cm cubes in a pot with 350 ml water. Cover and simmer over low heat for 24 minutes. Mash a cabbage strip between your fingers; it should fall apart without any resistance. If it is still firm, cook for 5 more minutes.

Mash and adjust the consistency

Strain the cooking liquid into a separate bowl and blend the solids. Add the cooking liquid a spoonful at a time until the puree slowly drips off a spoon. Stir in the olive oil at the end. There is no need to strain the puree; once the core is removed, no fibrous pieces should remain.

Reminder

Do not discard the cooking water; some of the cabbage and carrot sweetness ends up in it. If you thin the puree with tap water, it will taste noticeably bland.
