In Aegean villages, wild fennel is called arapsaçı and has a much stronger anise aroma than cultivated fennel sold in stores. The stems are boiled first, and the cooking water is discarded to remove their bitterness. Then they simmer slowly in their own liquid with onion and a handful of rice. Add the lemon at the end, after removing the pot from the heat.

How to make it?

Trim and blanch the fennel

Cut off and discard the woody ends of the fennel stems, then cut the fronds and tender stems into 3–4 cm pieces. Rinse them twice in plenty of water, add them to boiling water, and blanch for 5 minutes. Discard all the blanching water to remove the wild fennel’s bitterness. Press the fennel gently in a strainer to remove excess water.

Soften the onion

Pour half the olive oil into a wide pot and cook the diced onion over medium heat. Stop when it softens and turns translucent, before it takes on any color; browning it will darken the dish and mask the lemon’s freshness.

Add the rice and fennel

Add the rinsed and drained rice to the onion and cook, stirring, for 2 minutes, until the grains absorb the oil and turn glossy. Add the drained wild fennel, sugar and salt, then pour in the water. The water should just cover the greens, not rise above them.

Simmer until tender

Cover and cook over low heat. The dish is ready when the rice is soft enough to crush between two fingers and only oil and two or three 15 ml measures of thick liquid remain in the pot. If the liquid evaporates too soon, add 50 ml hot water.

Add the lemon

Remove the pot from the heat, drizzle in the remaining olive oil and lemon juice, and cover.

Reminder

If you squeeze the lemon while the pot is still on the heat, the greens will darken and develop a metallic taste. Add it after removing the pot from the heat, then let the dish rest at room temperature for at least one hour before serving.
