Among China's more technically demanding dumplings, xiaolongbao are made by wrapping a minced-beef filling and jellied meat stock in thin dough, then steaming. As the jelly melts during cooking, it creates a hot soup that fills the mouth on the first bite.

Wrap the dough in plastic wrap and rest for five minutes.
Mix the ground beef, diced jellied stock, ginger, scallion, soy sauce and sesame oil.
Roll the dough thinly and cut out small circles. Place filling in the center of each and gather the edges into fine pleats to seal. Work quickly before the jelly melts.
