Inspired by Japan’s quick-pickling tradition, these shishito peppers are lightly blistered on the grill and rested for a few hours in a vinegar-and-soy brine. The smoky char balances the brine’s tangy saltiness, giving the peppers both a crisp texture and deep flavor.

How to make it?

Char the Peppers

Brush a thin layer of olive oil over the shishito peppers and cook them on a preheated grill, turning until lightly blistered and charred on all sides. Remove from the grill and let cool.

Prepare the Brine

In a pot, bring the vinegar, water, soy sauce, sugar, salt, and crushed garlic cloves to a boil. Stir until the sugar and salt dissolve, then remove from the heat and let cool until lukewarm.

Add the Peppers to the Brine

Place the cooled peppers in a jar and pour the lukewarm brine over them to cover. Seal the jar and refrigerate to let the peppers pickle.

Serve

Remove the peppers from the brine, sprinkle with sesame seeds, and serve chilled.

Reminder

Biberleri ızgaradan çıkar çıkmaz, hâlâ sıcakken doğrudan salamuraya attım ve kapağını kapatıp bekletmeye bıraktım; ertesi gün tadına baktığımda salamura iyice sulanmış, tuz ve sirke dengesi bozulmuş, sonuç neredeyse tatsız kalmıştı.

Shishito bulamadığım için mahalledeki manavdan aldığım sivri biberle denedim, tarifte yazan tatlı-ekşi salamura sivri biberin kendine has acılığını hiç bastıramadı ve sonuçta yenmeyecek kadar keskin bir sonuç çıktı.
