Ready-made yufka (thin Turkish pastry sheets) is spread out thinly and filled with a mixture of olive oil, red pepper and tomato, making a quick alternative when there is no time to let dough rise. As it contains no dairy products, people with lactose sensitivity can enjoy it comfortably.

How to make it?

Prepare the filling

Finely dice the tomato, red pepper and onion and mix in a bowl with the olive oil, Turkish red pepper flakes and salt. Add the chopped parsley at the last moment.

Fill the pastry

5 min

Lay the pastry sheet on a flat surface and spread the filling in the center. Fold all four sides inwards to close into a square.

Cook in a frying pan

8 min

Cook the folded pastry in a dry frying pan over medium heat for 8 minutes, until golden on both sides.

Reminder

Do not leave the filling too wet when filling the pastry sheets, or the edges may open during cooking. Allergens: contains wheat (gluten).

Zeytinyağını dört yemek kaşığı yerine iki kaşığa indirdim, yine de harç yeterince ıslaktı ve yufka yapışmadı; pişirme süresini bir dakika kısaltarak daha kuru bir sonuç elde ettim.

Yufkayı dört kenardan katladığımda harç dışarı taştı, bu yüzden kenarları biraz daha içe katlamam gerekti; tavada da 8 dakika değil 12 dakika sürdü çünkü ocağım düşük ısıda kaldı.
