Simmer the Raisins

A refreshing drink enjoyed at Ramadan and gatherings in Iraq, zbeeb is made by simmering raisins for a long time, straining the liquid, and brightening it with mint and lemon. The raisins’ natural sugar gives it a lightly tart balance. Serve over ice at gatherings.

Pour the mixture through a strainer and press the raisins firmly with the back of a spoon to extract their liquid. Discard the pulp.
Return the strained liquid to the heat, add the sugar, and boil for 10 more minutes. Remove from the heat.
Add the lemon juice and mint leaves to the cooled syrup. Chill in the refrigerator for 45 minutes and serve over ice.
When straining the raisins, press them firmly with the back of a spoon to extract their liquid, or the drink may be watery and bland. Sweeten the drink while it is hot and taste it again after it cools; it will taste less sweet when cold.
