Zeljanica is a Balkan pie made by layering spinach and cheese filling between yufka (thin Turkish pastry sheets) and baking until golden. A classic spinach-filled dish in the region’s pie tradition, it is served for breakfast or as a snack.
Mix the spinach, cheese, 2 eggs, and salt.
Oil a baking pan and layer the yufka (thin Turkish pastry sheets), brushing each with oil and scattering spinach filling between the layers.
Whisk the remaining egg with the milk and drizzle it over the pie.
Bake in a preheated 190°C / 375°F oven for 35–40 minutes, until the top is golden.
Cut into slices and serve hot or warm.
Store in a covered container in the refrigerator for up to 3 days or in the freezer for up to 2 months.
