Cook the Vegetables

Add the chopped zucchini and potatoes to the leftover cooking water and boil for 12 minutes, until tender.

Drain and Mash

Drain the vegetables into a bowl and mash with a fork or blender until smooth. If needed, add a few spoonfuls of the cooking water to adjust the consistency.

Drizzle the olive oil over the cooled puree and stir.

Reminder
