Kumara is the iconic sweet potato of New Zealand and Māori cooking; in this pastry it is boiled, mashed and worked into the dough, then given a lift with chilli. The long proof is what allows the dough to rise properly, so this is not a recipe to rush.

How to make it?

Prepare the kumara

Boil and mash the kumara, and let it cool completely.

Activate the yeast

Dissolve the yeast in the lukewarm milk and let it foam for 5 minutes.

Proof the dough

45 min

Knead the flour, salt, melted butter, cooled kumara mash, chilli and yeast mixture into a smooth dough, cover and let it proof for 45 minutes.

Bake

20 min

Shape the dough into six scones and bake in an oven preheated to 200°C for 20 minutes until golden.

Reminder

The kumara mash should be fully cooled, not warm, when it goes into the dough, warm mash kills the yeast and stops the dough from rising. Allergens: contains wheat (gluten), milk and dairy.
