Thin sheets of dough are filled with a spicy white cheese mixture and folded into layered triangles, then puffed up in hot oil. Separating the layers cleanly and folding without tearing takes a practiced hand, and since it stays good once cold, it slips easily into a picnic basket.

How to make it?

Prepare the Filling

Mix the crumbled white cheese with the pul biber, egg and chopped parsley in a bowl.

Fold the Filo

15 min

Cut each sheet of filo into quarters, spoon filling onto one end of each strip and fold tightly into a triangle.

Fry

5 min

Heat the frying oil over medium heat and fry the pastries until golden on both sides, about 5 minutes.

Reminder

Do not stretch the dough while folding; thin filo tears easily, and folding gently is what makes the pastry puff up. Allergens: contains gluten (filo), milk and dairy (white cheese), egg.
