Made by cooking the notoriously firm wild pear known as ahlat in a pressure cooker, this jarred winter preserve reaches its set point far faster than the hours-long traditional method. Balanced with lemon juice, it adds a winter option to the breakfast table.

How to make it?

Prepare the pears

Wash the pears, halve them and remove the cores.

Cook in the pressure cooker

15 min

Place the pears with sugar and water in the pressure cooker, close the lid and cook for 15 minutes once it starts hissing.

Mash and reduce

10 min

Once the pressure drops on its own, mash the pears with a fork and simmer with lemon juice in an open pot for another 10 minutes until it thickens.

Jar it

5 min

Fill the hot jam into sterilized jars and turn them upside down to cool.

Reminder

If you don't clean out the pear cores thoroughly, hard bits remain in the jam, so don't skip this step. Don't open the pressure cooker lid before the pressure drops on its own, as it carries a burn risk.

Düdüklü tencerede pişirince ahlatlar 15 dakikada yumuşadı, normal tencerede saatler sürerdi; kıvamı da tam kaşıkta duracak gibi oldu.
