Sweetened with date paste instead of a refined sweetener, these cookies bring a distinct aniseed aroma to breakfast and tea time. Their firm texture also makes them easy to pack in a lunch box.

Step by Step

How to make it?

1

Prepare the dates

5 min

Soak the dates briefly in hot water and blend them into a smooth paste.

2

Knead the dough

8 min

Beat the room-temperature butter with the egg and date paste, then add the flour, baking powder, salt and aniseed to form a soft dough.

3

Shape and bake

12 min

Pinch off small pieces of dough and shape into flat cookies, then bake in an oven preheated to 180°C for 12 minutes until the edges turn lightly golden.

4

Cool

5 min

Cool the cookies on a wire rack for 5 minutes.

Reminder

If you don't blend the date paste smoothly, it stays lumpy in the dough and the cookies won't bake evenly. Don't move them before they cool for at least 10 minutes out of the oven, or they may fall apart. Allergens: contains wheat (gluten) and egg.
