Crispy chips from leftover non bread are a quick meze made by thinly slicing stale Uzbek non bread and pan-frying it in olive oil. A way to use up bread rather than waste it, they pack easily into a lunchbox.

How to make it?

Slice the bread

Slice the stale bread thin and evenly.

Fry

Heat the olive oil in a pan, arrange the slices without crowding, and fry for 10 minutes, turning, until golden on both sides.

Season and serve

Sprinkle the hot slices with salt and nigella seeds and serve.

Reminder

Do not cut the slices thick, or the centre will fry soft instead of crisp. Do not crowd the pan; if the slices touch they will not brown evenly. Allergens: contains gluten (wheat flour).
