A practical winter preparation in which fresh vine leaves are briefly boiled and made long-lasting in a salted brine, providing access to dolma and sarma even out of season. It's the base ingredient for stuffed vine leaves and olive-oil sarma.

Blanch the leaves in boiling water for thirty seconds to one minute, then immediately transfer to cold water. Note: If you blanch the leaves too long, they will soften and tear, so keep it brief.
Roll the cooled leaves into bundles of ten to fifteen.
Pack the bundles tightly into a sterilized jar.
Boil the water, salt and citric acid, then let cool until lukewarm.
Pour the lukewarm brine over the leaves so it covers them completely, close the jar tightly and store in a cool place; ready to use after one week.
Important: Don't blanch the leaves for too long, as overcooked leaves will tear when rolling the dolma. Roll the leaves into bunches and arrange them in the jar, keeping them all under the brine. Before using, rinse a few times in lukewarm water to remove the salt.
Bundling the leaves into small bunches of ten to fifteen leaves makes it easier to take out just what you need when opening the jar.
