Coarse bulgur is toasted with boiled chickpeas, cumin, chilli flakes and cinnamon and simmered in this pilaf, making a filling main dish for a guest table. Bulgur's lower glycaemic index combined with the fibre in chickpeas makes it a measured, diabetic-friendly option.
Cook the onion in the olive oil until lightly golden.
Add the tomato paste, cumin, pepper flakes and cinnamon and cook for 2 minutes.
Add the coarse bulgur and boiled chickpeas and toast, stirring, for another 3 minutes.
Add the hot water and salt, and once it comes to a boil, cook covered over low heat for 20 minutes.
Take it off the heat and let it rest, covered, for 25 minutes before serving.
Do not skip toasting the bulgur with the spices before adding the liquid; it keeps the grains separate as they cook. Do not cut the resting time short once it is off the heat — the grains only firm up properly as it rests. Allergens: contains wheat (gluten).
