Balkan pickle is a simple pickle found across nearly every Balkan kitchen, made by steeping cauliflower, carrot and pepper in a vinegar brine. Cutting the vegetables to an even size lets the salt penetrate each piece equally. With so few ingredients, it packs easily into a lunchbox and travels well for a picnic.
Cut the cauliflower, carrot and green pepper into even pieces and pack them tightly into jars.
Bring the vinegar, water and salt to the boil in a pot.
Pour the boiling brine over the vegetables and seal the jars.
Once the jars have cooled to room temperature, store them in a dark place for at least 1 week.
Before pouring the hot brine over the vegetables, make sure they're packed tightly in the jar; loosely packed vegetables float to the surface and can spoil.
Adding a few cloves of garlic to the brine gives it the sharp aroma typical of Balkan pickles.
