Cook the Onion
8 minMelt the butter in a pot and cook the chopped onion until translucent.
Leftover boiled chicken pieces from the day before are simmered with toasted bulgur in chicken stock, making a simple, filling bulgur pilaf typical of Balkan home kitchens. Bulgur's lower glycemic index makes this pilaf a diabetes-friendly choice.

Add the bulgur and toast for 5 minutes, stirring, until the grains turn glossy.
Add the leftover cooked chicken, hot chicken stock, salt and black pepper, then bring to the boil.
Cover and simmer over low heat for 15 minutes, until all the liquid is absorbed.
Take off the heat and let it rest for 5 minutes, then fluff and serve.

If you have no leftover chicken, poach and shred a fresh breast instead; this adds about 15 extra minutes of poaching time.
