A fixture on every Kazakh table, baursak is small pieces of yeasted dough deep-fried until they puff up golden. This version blends in whole-wheat flour to keep the traditional crackle while adding a heartier, more fibrous texture.

Add the whole wheat flour, flour and salt, then knead into a soft dough.
Let the dough rise in a warm spot for 15 minutes.
Cut the dough into small pieces and deep-fry them in hot oil until golden on all sides. If using an air fryer, brush the pieces with oil and cook at 200°C for 8 minutes; without an air fryer, bake them in an oven preheated to 200°C for 12 minutes instead.
Choose a warm, not hot, spot for the dough to rise — too much heat kills the yeast and stops it puffing. Watch the oil temperature while frying; oil that's too hot burns the outside while the inside stays raw. Allergens: contains wheat (gluten), milk and dairy.
Using water instead of milk gives the baursak a lighter, less rich flavour; add an extra spoon of oil to the dough to keep it soft.
