Bazhe, Georgia's cold walnut-thickened sauce, is traditionally poured over leftover cold chicken or turkey. The spiced depth from coriander and cinnamon also makes it keto-friendly.

Step by Step

How to make it?

1

Grind the walnuts

15 min

Grind the walnuts and peeled garlic cloves in a food processor until perfectly smooth — reaching the right texture takes time and attention.

2

Add the spices

10 min

Stir the coriander, cinnamon, ground red pepper and salt into the walnut paste.

3

Thin the sauce

15 min

Add the pomegranate juice and warm water gradually until the sauce reaches a pourable consistency, then balance the seasoning with salt.

Reminder

Add the water gradually — pouring it all in at once thins the sauce and ruins the walnut's texture. Allergens: contains tree nuts (walnut).
