This pilaf brings Ethiopia's signature berbere spice blend together with brown rice and seasonal vegetables in a pressure cooker. Because brown rice takes longer to cook, using a pressure cooker shortens the time considerably.

How to make it?

Sauté the vegetables

Sauté the chopped onion, carrot and red pepper in olive oil for 5 minutes.

Add the rice and spice

Add the rinsed brown rice and berbere spice to the vegetables and stir-fry for 2 more minutes.

Cook in the pressure cooker

25 min

Add the water and salt, close the pressure cooker lid, and cook over low heat for 25 minutes from the point it starts hissing.

Let it rest

15 min

Remove from the heat and let the pressure release naturally for 15 minutes, then fluff with a fork and serve.

Reminder

Wait for the pressure to release naturally before opening the pressure cooker lid, or the rice can end up half-cooked.

Esmer pirinç yerine bulgur kullansam pişirme süresi ne kadar kısalır, düdüklüde yine aynı su miktarı yeterli olur mu acaba? Denemeden önce öğrenmek istiyorum, aksi halde bulgur lapa gibi çıkabilir diye çekiniyorum.
