Black-eyed peas are cooked with cubed lamb in a pressure cooker for a hearty, quick-cooking dish. The tomato-paste and onion base keeps the peas intact while giving the stew a soft, rich consistency.

How to make it?

Brown the meat

In the pressure cooker, sauté the cubed lamb and onion over medium heat for 10 minutes until browned.

Add the peas

Add the rinsed black-eyed peas, tomato paste, salt, pepper and water, stir, then seal the pressure cooker.

Pressure-cook

20 min

Once the cooker starts hissing, cook over low heat for 20 minutes.

Rest and serve

10 min

Take off the heat and let the pressure release on its own for 10 minutes before opening the lid, then serve hot.

Reminder

Rinse the black-eyed peas well before cooking, or the foam they release can strain the lid's seal. Let the pressure release on its own before opening the lid, otherwise the peas break apart and the stew turns watery.
