An essential relish of Brazilian barbecue culture, this pickle is made by letting onion and bell pepper sit briefly in a vinegar brine. It packs easily into a picnic basket and brings a tangy balance alongside grilled meats.

How to make it?

Prepare the vegetables

Layer the onion and pepper into a large jar.

Boil the brine

15 min

Bring the vinegar, water, sugar, salt and bay leaf to a boil and simmer for 5 minutes, then remove from heat and let cool slightly for 10 minutes.

Let it rest

30 min

Pour the slightly cooled brine over the vegetables, seal the jar and let it rest at room temperature for 30 minutes before serving.

Reminder

Don't pour the brine over the vegetables while it's hot, wait until it cools slightly or the vegetables will lose their crunch.

Salamurayı tam ılımasını beklemeden döktüm, sebzeler gevrekliğini kaybedip yumuşadı; tarif ılınmasını bekleyin diyor ama acele ettim. İkinci denememde tam 10 dakika bekleyip döktüm, sonuç çok daha gevrek çıktı.
