Add the vinegar and olive oil and keep processing to get a creamy paste.
Add water gradually to reach your desired consistency. Careful: Add the water spoon by spoon, not all at once, the sauce thins out quickly.
Important: Soak the bread in vinegared water, squeeze out the excess liquid, and add it in; the sauce's creamy texture comes from this stale bread. Adjust the consistency with olive oil and a little water. Contains walnuts (tree nuts) and gluten.
If you lightly toast the walnuts before processing them, the aroma deepens; this small step gives the tarator a distinct nutty flavor.
