A street favourite from Puebla, chalupa starts with a thin masa disc deep-fried until crisp, then layered with beans, cheese and lettuce. Quick and filling, this snack comes together for a crowded dinner table in just a few minutes.

How to make it?

Knead the dough

Knead the masa flour with the hot water and salt until smooth, then divide into 4 equal pieces.

Shape

Flatten each piece into a thin disc about half a centimetre thick.

Deep-fry

Heat the vegetable oil in a deep pan and fry the discs on each side for three minutes, until puffed and golden, then drain on paper towels.

Top

Spread the mashed beans, grated kaşar cheese, lettuce and tomato over the hot bases and serve.

Reminder

Watch the oil temperature while frying; if it is too cool the discs soak up oil without puffing. Allergens: contains dairy (kaşar cheese).
