Drizzled over the fried festival, the hot sauce creates a sharp contrast with the sweet dough.
Mix the flour with the cornmeal, sugar, baking powder and salt, add the warm water a little at a time to form a soft dough, cover and rest for 10 minutes.
Divide the dough into equal pieces and roll each one between your palms into a thin cylinder.
Heat the vegetable oil and fry the cylinders for 10 minutes until golden on every side.
Drain the fried festival on paper towels, drizzle the leftover hot sauce over the top and serve hot.
Don't roll the cylinders too thin; overly thin dough hardens quickly in the hot oil and can stay raw inside. Allergens: contains gluten (flour).
This recipe deliberately fries two extra portions; once cooled, keep them in a sealed container and reheat them for a few minutes the next day to serve them freshly.
