Sea samphire, the seasonal delicacy of the Aegean coast, gains a classic texture with apple cider vinegar in this pickle. Keeping the added salt light, since the plant is naturally salty, prevents an overly salty result.

How to make it?

Blanch

Blanch the sea samphire in boiling water for 5 minutes and drain.

Cook the vinegar mixture

Bring the apple cider vinegar, water, salt, garlic cloves and whole black pepper to a boil and cook for 5 minutes.

Jar it

7 min

Arrange the sea samphire in a jar and pour the hot vinegar mixture over it.

Rest

20 min

Seal the lid and let sit at room temperature for 20 minutes.

Reminder

Go light on the salt; sea samphire is naturally salty, and adding too much makes the result inedible.
