This Turkish sauce is made by quickly thickening tomatoes with vinegar and tomato paste in a pressure cooker. Free of nuts, this recipe is a sauce that can be safely served to those with nut allergies too.

How to make it?

Prepare the tomatoes

Roughly chop the tomatoes.

Add to the pressure cooker

Put the tomatoes, tomato paste, garlic cloves, vinegar, sugar and salt in the pressure cooker and seal the lid.

Cook

10 min

Once the cooker reaches pressure, cook for 10 minutes and release the pressure.

Blend smooth

5 min

Add the olive oil and blend until smooth.

Reminder

Let the sauce cool slightly before blending; blending hot liquid in a closed blender can cause the lid to pop off.
