A must at Armenian celebration tables, gurabiye is a buttery cookie enriched with mahlab and toasted hazelnuts, then rolled in powdered sugar. Its melt-in-the-mouth texture makes it a favourite for guests.

How to make it?

Make the dough

15 min

Beat the room-temperature butter with half the powdered sugar, the mahlab and salt, then work in the flour and chopped hazelnuts.

Shape and chill

15 min

Roll the dough into small balls, arrange them on a tray, and chill for 15 minutes.

Bake

20 min

Bake in an oven preheated to 170°C for 20 minutes until the edges turn lightly golden.

Coat in sugar

5 min

While still warm, roll the cookies in the remaining powdered sugar.

Reminder

Don't skip chilling the dough before baking, or the cookies will spread too much in the oven. Allergens: contains gluten (flour), dairy (butter) and tree nuts (hazelnut).

Tarifte 20 dakika fırınlama yazıyor ama benim fırınım hızlı pişiriyor, 16 dakikada kenarlar renk aldı, biraz erken çıkarmam gerekti. 200 gram tereyağı da bana biraz fazla geldi, bir dahaki sefere 180 grama düşüreceğim.

Hamuru 15 dakika yerine 30 dakika dinlendirsem daha mı az yayılır acaba? Fındık yerine ceviz kullansam kıvamı bozar mı, denemek isterim; belki ikisini yarı yarıya karıştırmak daha dengeli bir sonuç verir.
