A staple of Armenian pantries for winter, tourshi is made by steeping cauliflower, carrots and celery in a vinegar brine boiled with garlic, coriander seed and bay leaf. A few days of resting gives the vegetables a balanced sour, spiced flavour.

How to make it?

Prepare the vegetables

Clean and cut the cauliflower, carrots, celery and garlic.

Boil the brine

Bring the vinegar, water, salt, coriander seed and bay leaves to the boil.

Fill the jars

Pack the vegetables into clean jars and pour the hot brine over them.

Let it rest

Seal the jars and let them sit at room temperature for 3 days, then move to the fridge.

Reminder

Let the brine cool to room temperature before sealing the jars — hot brine can cause the lids to bulge.
