Served alongside injera at Ethiopian celebrations, shiro wat is made by cooking chickpea flour with onion, garlic and paprika. Stirring it in without lumps takes a bit of skill, resulting in a smooth, spiced, paste-like stew.
Sauté the onion, garlic and ginger in olive oil until soft.
Add the tomato paste and paprika and stir for 2 minutes.
Add the water and bring to the boil, then whisk in the chickpea flour gradually to avoid lumps. Simmer over low heat for 10 minutes.
Add the salt and cook for 3 more minutes, then serve hot.
Don't dump the chickpea flour in all at once; adding it gradually while whisking prevents lumps from forming.
The heat of paprika varies between brands; I would start with half a tablespoon the first time and adjust to taste.
