Made to use up leftover cooked lamb, this meze tops creamy tahini hummus with cumin-browned lamb and crisp pine nuts. This is how hot hummus is often served at Saudi tables.

How to make it?

Make the chickpea purée

Blend the chickpeas, tahini, lemon juice, garlic, salt and some of the olive oil into a smooth purée.

Brown the lamb

Brown the leftover lamb in olive oil with the cumin and chilli flakes until crisped at the edges.

Toast the pine nuts

Toast the pine nuts in a dry pan until golden.

Plate and serve

Spread the hummus on a plate, top with the browned lamb and toasted pine nuts, drizzle with olive oil and serve.

Reminder

If the chickpeas are not boiled soft enough, the hummus stays grainy instead of smooth. Allergens: contains sesame and tree nuts (pine nuts).

Nohutları yeterince yumuşak haşlamamışım, blenderdan geçirince humus pürüzsüz olmadı, tanecikli kaldı. Kuzu eti güzeldi ama humusun dokusu beklediğim gibi olmayınca genel sonuçtan pek memnun kalmadım.

Kalan kuzu etini böyle değerlendirmek harika bir fikirmiş, kavururken kimyonun kokusu mutfağa yayıldı. Çam fıstığını biraz fazla kavurdum ama humusun kıvamı yine de çok iyiydi.
