A thin-dough classic from Azerbaijani cooking, kutab is made by wrapping a ground beef filling in dough and cooking it on a dry griddle. A practical party snack, it gets a lively kick from sumac and mint.

How to make it?

Knead the dough

Knead the flour, water and salt together until you have a smooth dough.

Rest the dough

Wrap the dough and let it rest for five minutes.

Make the filling

Mix the ground beef, onion, mint, sumac and salt together.

Shape the kutabs

Roll the dough into thin rounds, place filling on one half, fold over and press the edges closed into a half-moon shape.

Cook

10 min

Cook the kutabs on a dry griddle or pan for 6 minutes per side.

Serve

Drizzle the hot kutabs with melted butter and serve.

Reminder

Do not forget to dust with flour while rolling the dough thin, or it may stick and tear. Allergens: contains gluten (flour) and dairy (butter).

You can prepare the kutabs ahead and freeze them unbaked; on the day of the party, just cook them straight from frozen on the griddle.

Tarifte 6 dakika yazıyordu ama sacım fazla ısınmıştı, 4 dakikada bile alt yüzü fazla koyulaştı. Isıyı biraz kısıp süreyi kısaltmak gerekiyormuş, herkesin sacı aynı ısıda değil.
