Red and green peppers are roasted, peeled and blended with tomato, garlic and cumin to make Morocco's classic cold relish. Its vegetable-forward, low-glycemic makeup makes it diabetes-friendly, and it works just as well alongside grilled meat as it does packed in a lunchbox.

Let the hot vegetables steam in a bag for 10 minutes, then peel off the skins.
Chop the peeled vegetables into small pieces and mix with the garlic, cumin, olive oil, lemon juice and salt.
Let the salad rest in the fridge for at least 30 minutes to let the flavours come together.
Turn the vegetables occasionally while roasting, or one side can burn and turn bitter. If you want a milder garlic flavour, mince it finely instead of crushing.
All red peppers can replace the mix of red and green; the flavour turns out a touch sweeter and more balanced.
