Cornichons, the classic French pickle served alongside charcuterie, are made without any cooking by soaking baby cucumbers in a vinegar brine. Flavoured with dill and whole peppercorns, they make an easy addition to a picnic basket.

How to make it?

Prepare the cucumbers

Wash the baby cucumbers well, trim the stem ends and pack them into a clean jar.

Mix the brine

Stir together the vinegar, water and salt at room temperature, and add the bay leaf and whole peppercorns.

Pour into the jar

Pour the brine over the cucumbers until fully covered, tuck in the dill sprigs and seal the jar.

Chill

30 min

Chill the jar in the refrigerator for at least 30 minutes and serve cold.

Reminder

Mix the brine with room-temperature water, not hot — hot water softens the crunch. Do not eat before the jar has chilled for at least 30 minutes, that time lets the flavour settle. Allergens: none.

Salamurayı sıcak suyla karıştırdım, tarifte oda sıcaklığında su kullanılması yazıyormuş ama fark etmeden atladım; salatalıklar 30 dakika bekledikten sonra beklediğim kadar çıtır çıkmadı, biraz yumuşak kaldı.

Sıcak su salatalığın hücre yapısını yumuşatıyor, çıtırlığın kaybolmasının sebebi bu. Bir dahaki sefere musluk suyunu kullanmanız yeterli, kaynatmaya hiç gerek yok.
