A refreshing Aegean-style meze in which white cheese, walnuts, and olive oil are mashed with dill. Loved with bread and at drinking tables, this ezme combines the saltiness of the cheese with the texture of the walnuts.

Mash the cheese

Place the white cheese in a bowl and mash with a fork; adjust to a chunky or smooth texture as you prefer.

Add the ingredients

Add the walnuts, olive oil, dill, thyme, lemon juice, and optional garlic, and mix well.

Spread the paste onto a serving plate, drizzle with a little olive oil, and serve with bread. Note: If the cheese is already salty, do not add extra salt.

Important: If the cheese is very salty, don't add extra salt to the spread; taste as you go. If you mash the spread with a fork it stays chunky, and if you blend it in a food processor it turns smooth — choose according to your preference. Contains milk (white cheese) and walnuts (tree nuts).
