A symbol of Ethiopian celebration and wedding tables, himbasha is a yeasted bread spiced with cardamom and clove, scored with a decorative knife pattern before baking. Toasting leftover slices with honey the next morning is a common habit in Ethiopian homes.

Shape the proved dough into a round loaf and place it on a greased baking tray. Lightly score a sunburst pattern on top with a knife and let it prove for another 20 minutes.
Bake in an oven preheated to 180°C for 35 minutes until deep golden on top.
Cover the dough with a damp cloth while it proves, or the surface will crust and crack. Allergens: contains wheat (gluten).
If you cannot find cardamom, clove alone will do, though most of himbasha's characteristic aroma comes from the cardamom.
