A staple of Jamaican celebration tables, this rice is made by simmering brown rice slowly in coconut milk with fresh thyme and scotch bonnet pepper. Thanks to the fibre in brown rice, it raises blood sugar more slowly and remains a classic side at large gatherings.

How to make it?

Prepare the rice

Rinse the brown rice under running water until it runs clear, then drain.

Bring to a boil

10 min

Bring the coconut milk, water, fresh thyme, scallion, pierced scotch bonnet pepper and salt to a boil in a pot.

Slow-simmer

80 min

Add the rinsed rice, cover and cook over low heat without stirring for 80 minutes until all the liquid is absorbed, then remove from the heat.

Rest and serve

10 min

Remove the scotch bonnet pepper, let the rice rest for 10 minutes, then serve topped with toasted grated coconut.

Reminder

Rinse the rice before cooking to wash off excess starch so the grains stay separate. Add the scotch bonnet pepper whole and remove it before it bursts, or the rice will turn overly spicy.

Using a small amount of chilli pepper instead of scotch bonnet gives you a more controlled level of heat.
