A köfte from Indian cuisine blended with cumin, coriander, and garam masala, cooked over low heat in a yogurt-tomato sauce. This spiced, filling one-pot dish is brought to the dinner table with rice or naan bread.

How to make it?

Prepare the meatballs

Knead the ground meat, onion, cumin, ground coriander, and salt, then shape into walnut-sized patties.

Fry the meatballs

Lightly fry the patties in hot oil until browned on all sides and set aside; they don't need to be fully cooked through, as they'll finish cooking in the sauce.

Prepare the sauce

12 min

In the same pot, sauté the onion until it turns pink, add the garlic and ginger, then stir in the tomato; cook over low heat for 10 minutes with the garam masala.

Combine the meatballs with the sauce

15 min

Add the fried patties to the sauce and cook for another 10 minutes over low heat. Caution: warm the yogurt with a spoonful of the sauce before adding it, otherwise it will curdle.

Reminder

Important: Lightly fry the meatballs before adding them to the sauce, or they may fall apart in it. Caution: When adding the yogurt to the hot sauce, add it over low heat while stirring constantly, or it will curdle if it boils. Allergens: contains a dairy product (yogurt).

If you first gently warm a spoonful of the cold yogurt with a bit of the sauce before adding it to the sauce, you greatly reduce the risk of it curdling.
