A little-known winter jam with a light apple taste, prepared by slowly cooking whole jujubes in syrup. Also found in the dried fruit and nuts aisle, this fruit offers a different jam experience in its fresh form.

How to make it?

Prepare the jujubes

Wash the jujubes and prick them in several spots with a fork.

Prepare the syrup

Boil the sugar and water to make a syrup, then add the jujubes.

Simmer

35 min

Cook the mixture slowly over low heat until the jujubes soften.

Thicken and jar

Add the cinnamon and lemon juice and cook until the syrup thickens. Important: it is ready when the jujubes turn semi-translucent and absorb the syrup; fill sterilized jars while boiling hot and seal them.

Reminder

Important: Pierce the jujubes in a few places with a fork, otherwise they may not absorb the syrup and stay firm on the surface. Contains no flour, milk, or eggs; it is plant-based and gluten-free. Fill sterilized jars with the boiling jam and store in a cool, dark place.

When piercing the jujubes, be careful not to damage the pits so the flesh around them doesn't fall apart. A small amount of cinnamon brings out the jujube's light apple-like taste.
