Quarter the fresh figs and arrange over the arugula; do this step close to serving so the cut surfaces have less contact with air.
Scatter the crumbled goat cheese and roughly crushed walnuts over the figs; drizzle thinly with olive oil, honey, and lemon juice and serve.
Important: Slice the figs right before serving; if left to sit, the cut surfaces darken and spoil the presentation. Note: Don't drizzle too much honey — figs are already naturally sweet enough. Allergen: contains nuts (walnuts) and dairy (goat cheese).
If you chill the figs in the refrigerator for a few minutes before slicing, the cut comes out much cleaner and neater.
