Leftover celery stalks cure for a few days in a vinegar, water and mustard seed brine to make the crisp vegetable pickle of English cuisine. Packed into a jar, it slips easily into a lunchbox.

How to make it?

Prepare the Celery

Wash the celery stalks and cut into finger-length pieces.

Boil the Brine

Boil the vinegar, water, mustard seeds and salt in a pot, then remove from heat.

Jar the Pickle

Pack the celery pieces into a jar, pour the cooled brine over them, seal and let cure in the fridge for at least 3 days.

Reminder

Waiting at least 3 days before eating lets the flavour settle.
