Amba, one of Iraqi cuisine's sharpest condiments, is made by lightly roasting green mango in the airfryer and seasoning it with turmeric, mustard seed and vinegar. Its sour, spiced character is a frequent companion to sandwiches and rice dishes.

How to make it?

Prepare the mango

Peel the green mangoes and cut them into thin slices.

Roast in the airfryer

Arrange the mango slices in a single layer in the airfryer basket and roast lightly on a medium setting for 10 minutes, removing once the edges lightly colour.

Season and rest

30 min

Mix the turmeric, mustard seeds, vinegar, red pepper flakes and salt, pour over the roasted mango slices, transfer to a jar and refrigerate for at least 30 minutes.

Reminder

Use the mango while still green and unripe; a ripe mango falls apart and will not give a pickled texture. Remember the turmeric can stain your hands and counter, so we recommend wearing gloves.
