Made by rolling Ireland's traditional soda bread thin and baking it, this recipe turns into a thin-crust snack topped with spicy cheese. The yeast-free dough rises with baking powder and buttermilk.
Mix the flour, baking powder and salt in a bowl. Add the buttermilk and melted butter and bring it together with just a few folds; don't overwork it.
On a floured surface, roll the dough out into a thin round, about 5 mm thick.
Scatter the grated cheddar and chilli flakes evenly over the rolled dough.
Bake in an oven preheated to 210°C for 25 minutes, until the cheese bubbles and the edges turn golden.
Important: don't overwork the dough, or it turns tough; soda dough should only be brought together and shaped a few times. Allergens: contains gluten (flour) and dairy (buttermilk, cheddar).
If you don't have buttermilk, you can get a similar tang by adding a teaspoon of lemon juice to milk and letting it sit for 5 minutes.
