A classic meze passed down from Ottoman cuisine, made by sautéing fresh spinach and combining it with garlicky strained yogurt. Served warm or cold, its soft texture offers a starter that is both light and satisfying.

How to make it?

Sauté the onion

Sauté the onion in olive oil over low heat until lightly pink.

Add the spinach

Add the washed spinach and cook for a few minutes until it releases its liquid and softens.

Prepare the sauce

Mix strained yogurt with crushed garlic and salt, then add it over the spinach once it has cooled to room temperature.

Stir gently and serve warm or cold.

Reminder

Important: Instead of boiling the spinach, sauté it in its own moisture — this results in less vitamin loss. Allergen: contains dairy (yogurt). Note: bring the yogurt to room temperature before adding it to the hot spinach, otherwise it may curdle.

If you add the yogurt right before serving, its color stays vibrant and it keeps its tangy freshness; if mixed in ahead of time, it can release water and turn watery on the plate.
