Antipasto, the opening course of Italian gatherings, is made here by tossing olives and roasted red pepper with a garlicky, chili-flecked olive oil. Ready in fifteen minutes, this platter makes a quick start to a celebration table.

Prepare the olives and pepper

Place the olives and roasted red pepper in a bowl.

Prepare the oil

Mix the garlic slices, thyme, pepper flakes and lemon zest with the olive oil.

Toss and serve

Pour the oil mixture over the olives and pepper, toss and transfer to a serving platter.

Reminder

Slice the garlic very thin; thicker slices can turn bitter in the olive oil and leave a harsh taste.

Doubling the pepper flakes makes the platter noticeably sharper; in that case I would add half a teaspoon more lemon zest too, to keep the balance.
