Sauté the onion, carrot, celery stalk and garlic in olive oil over medium heat until softened. Add the tomato paste and sauté for 2 more minutes.
Add the tomatoes, boiled beans, vegetable stock, bay leaf, thyme, salt and black pepper, bring to a boil, then cook over low heat for 15 minutes.
Add the pasta directly to the boiling soup and cook until al dente, close to the package time.
Remove the bay leaf and let rest for a few minutes; serve hot drizzled with extra virgin olive oil.
Important: Add the pasta right before serving; if the soup sits, it absorbs the starchy water and can become overly thick — thin it with water or vegetable stock if needed. Allergen: contains wheat (gluten).
If you drizzle a swirl of extra virgin olive oil and sprinkle fresh thyme on top when serving, you get close to the classic presentation seen in Italian restaurants.
