Inspired by Thai street food, this grilled edamame is made by marinating fresh soybean pods in garlic, chili and sesame oil before charring them. Served with lime juice and coarse salt, this legume snack is both light and satisfying for a mid-afternoon bite.
Boil the edamame in salted water for 3 minutes, then drain.
Toss the drained edamame with the garlic, chili, sesame oil and soy sauce, then let it sit for 10 minutes.
Let the marinated edamame sit at room temperature for 10 minutes; this time is needed for the flavour to soak into the pods.
Grill the marinated edamame over high heat, turning until the pods darken slightly.
Squeeze lime juice over the top and serve with coarse salt.
Don't over-salt the boiling water; the marinade already contains soy sauce, so the salt level rises quickly. Allergens: contains soy and sesame.
If you don't have a grill, you can char them in a cast-iron pan for the same time; the flavour stays the same, but you lose the characteristic grill marks.
