Jiu Cai He Zi is a Chinese pastry made by folding thin dough around a savoury filling of dried shrimp, chives and scrambled egg into a half-moon pocket. Because the filling is seasoned with nothing more than salt and sesame oil it works as a diabetic-friendly option, and since it is good cold too, it packs easily for a picnic basket.

How to make it?

Prepare the dough

Knead the flour, water and salt into a smooth dough, cover and let it rest for 15 minutes.

Make the filling

5 min

Mix the chives, dried shrimp, scrambled egg and sesame oil in a bowl.

Fill and fold

10 min

Roll the dough into thin rounds, spoon the filling in the middle, fold into half-moon pockets and seal the edges with a fork.

Pan-fry

10 min

Pan-fry in a lightly oiled pan for 5 minutes on each side until golden and crisp.

Reminder

Press the edges of the dough pockets firmly closed with a fork, any gaps will let the filling leak out in the pan. Allergens: contains wheat (gluten), egg and shellfish (shrimp).

Hamuru ilk defa bu kadar ince açtım, dört kenarı da düzgün kapanmayınca birkaç tanesinden yumurta sızdı ama tadı yine de çok güzeldi; yeşil soğanın 200 gramı dört kişiye tam yetti.
