A pink classic of Lebanese cuisine, kabees is made by brining turnip batons together with beet slices in a vinegar solution. Nut-free, and a natural addition to a brunch mezze spread.

Pack the turnip batons tightly into a clean jar, layering in the garlic cloves and beet slices.
Bring the water, vinegar and salt to a boil in a pot, then remove from the heat and let it cool to warm.
Pour the warm brine into the jar until it fully covers the vegetables, seal and leave at room temperature for 3 days, then refrigerate.
Let the brine cool to warm before pouring it over the turnips, not while still hot; hot brine softens the vegetables too early.
