Inspired by Ireland's tradition of kale and cheese, this salad is made by massaging kale with olive oil until tender and tossing it with grated cheddar. Low in carbs and calories, it also works comfortably as a late-night snack.

Step by Step

How to make it?

1

Massage the kale

10 min

Massage the sliced kale with olive oil and salt using your hands until it softens.

2

Let it rest

30 min

Let the massaged kale rest at room temperature for 30 minutes; this time allows the leaves to soften fully.

3

Make the dressing

5 min

Whisk together the olive oil, apple cider vinegar, lemon juice, salt and pepper to make a dressing.

4

Toss and serve

10 min

Toss the softened kale with the dressing and serve topped with the grated cheddar cheese.

Reminder

Don't rush the massaging step; keep going until the leaves darken and soften under your hands, or the salad stays tough. Allergens: contains dairy (cheddar cheese).

Editor's Note Editörün Notu

Using low-fat white cheese instead of cheddar gives the salad a tangier flavour; it's a swap you can make without breaking the keto balance.
